Cherry Almond Streusel Muffins

2 cups buttermilk biscuit and baking mix
3/4 cup sliced almonds -- toasted
3/4 cup granulated sugar
1 cherry vanilla low-fat yogurt (8 ounce)
2 eggs
3 tablespoons butter or margarine -- melted
1 teaspoon chopped or halved maraschino cherries

Streusel Topping:
1/4 cup sliced almonds
1/4 cup granulated sugar
1/4 cup flour
2 tablespoons butter or margarine -- melted

Preheat oven to 400 degrees.

In large bowl, stir together baking mix, almonds and sugar; make a well.

In small bowl, combine yogurt, eggs, butter and almond extract; mix well. Add to dry ingredients; fold with rubber spatula just until dry ingredients are moistened. Fill oiled or paper-lined muffin cups 2/3 full. Gently press cherry pieces into each muffin (Another option: press one whole maraschino cherry into center for a surprise).

In a small bowl, mix topping ingredients until crumbly; sprinkle over muffins. Bake in 400 oven 18 to 20 minutes. Cool 5 minutes; remove from muffin cups.

Makes 12 muffins.
