Cinnamon Apple Muffins

1 cup sugar
1 tablespoon baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 1/2 cups Granny Smith apple -- peeled and chopped
1 cup lowfat buttermilk
1/3 cup skim milk
1/3 cup lowfat ricotta cheese
3 tablespoons vegetable oil
1 tablespoon vanilla extract
2 large egg whites
1 large egg
3 tablespoons sugar
2 teaspoons ground cinnamon


Preheat oven to 400.

Combine first 5 ingredients in a large bowl. Stir in apple, and make a well in the center of the mixture. Combine buttermilk and the next 6 ingredients in another bowl (buttermilk through eggs); stir well with a whisk. Add to flour mixture, stirring just until moist. Spoon batter into 18 muffin cups.

Combine 3 tablespoons sugar and 2 teaspoons ground cinnamon in a small bowl; sprinkle evenly over batter. Bake at 400 for 18 minutes or until done. Remove from pans immediately; cool on a wire rack.
