Apricot Oatmeal Muffins

3/4 c Boiling water
1 c Quick cooking rolled oats
1/2 c Dried apricots
1/2 c Margarine
2 1/2 c Flour
1/2 c Packed brown sugar
1 tb Baking powder
1/2 ts Salt
1 Egg
1 c Milk


Combine first 4 ingredients; stir until margarine melts. Cool. Meanwhile, sift following 4 dry ingredients together; set aside. Beat egg with milk and add to oatmeal mixture. Stir flour mixture until just moistened. Spoon into greased or papered muffin cups (3/4 full) and bake at 400 F for 20 minutes, or until done.
