Banana Carrot Oat Bran Muffins

1 c Skim milk
1 3/4 c Oat bran
3/4 c Whole wheat flour
1 tb Baking powder
1/2 c Egg Beaters 99% egg substitute
3/4 c Carrot, grated
1 md Banana, mashed
2 tb Oil
1/2 c Brown sugar
1/4 c Walnuts, optional

Mix togwether skim milk, oat bran, and flour. Mix eggs, carrots, and banana. add remainning ingred, mix together then stir in oat bran mixture. Mix unti moistenned. Pour into 12 ltly. oiled muffin tins. Bake 350 for 18-20 min.
