Cheese and Pepper Muffins

2 1/2 cups all-purpose flour
1/4 cup yellow cornmeal
1/4 cup sugar
2 tablespoons baking powder
1/2 teaspoon salt
1/4 teaspoon red pepper
3/4 cup shredded sharp cheddar cheese
1/4 cup finely chopped onion
3 tablespoons finely chopped green pepper
2 ounces diced pimiento -- drained
2 eggs -- beaten
1 1/2 cups milk
1/4 cup vegetable oil


Combine first 10 ingredients in a large bowl; make a well in center of mixture. Combine eggs, milk, and oil; add to dry ingredients, stirring just until moistened. Spoon into greased muffin pans, filling two-thirds full. Bake at 400F for 20 to 25 minutes. Remove from pans immediately.


Yield: 1 1/2 dozen.
