California Orange Muffins

1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raw wheat germ
1/4 cup unsalted butter -- at room temperature
1/4 cup orange blossom honey
1 egg -- beaten
1 orange -- zested
1/2 cup fresh orange juice


Preheat the oven to 375 degrees. Butter a muffin tin. Sift the flour with the baking powder, soda and salt. Add the wheat germ and set aside. Cream the butter, add the honey and beat until smooth and fluffy. Blend in the egg, orange rind and orange juice. Add the dry ingredients to the creamed mixture, stirring just until all the ingredients are moist. (The batter will look lumpy.) Fill the greased tins 2/3 full; bake for 20 minutes, until muffins are rounded and brown. Turn out immediately, bundle in a cloth-lined basket and bring to the table. Makes a dozen muffins.
