Fat Free Carrot Muffins

2 1/4 c Flour
1/3 c Brown sugar
1 ts Cinnamon
1 ts Vanilla
1/2 ts Baking powder
3 Grated carrots
8 oz Non-fat vanilla yogurt
1/2 c Egg substitute
1/2 c Sugar
1 ts Baking soda
1/4 ts Ginger
1/2 c Raisins
1/2 c Unsweetened applesauce


A moist, no-fat muffin. Mix dry ingredients together. Mix liquid ingredients, combine; mixing only until all ingredients are moist. Pour into greased jumbo muffin cups. Bake at 350 for 30 minutes. Makes 6 jumbo muffins.
