Maple Cornmeal Muffins

1 1/2 c Self rising flour
1/2 c Yellow cornmeal
1 Egg; beaten
1 c Milk
1/4 c Cooking oil
1/4 c Maple syrup

Stir together flour and cornmeal. Make a well in center. Combine egg, milk, oil and syrup; add all at once to dry ingredients. Stir just until moistened. Grease muffin cups; fill 2/3 full. Bake in 400~ oven for 20-25 minutes. Serve warm. Makes 16 muffins.
