Cheese Muffins

1/2 lb American cheese
1 tb Sugar
2 c Cake or 1 3/4 c. bread flour
1/2 ts Salt
4 ts Baking powder

Force cheese through ricer. Can use Cheddar cheese for stronger flavor. Stir the cheese into the sifted ingredients until all particles of cheese have been separated. 1 c. milk 3 tbsp. melted butter Combine and beat well the egg and milk. Add these ingredients to the flour mixture. Beat the batter only until blended. Fold in 3 tablespoons melted butter. Place in greased muffin tins, 10-12 muffins. Bake at 350 degrees about 20 minutes.
