Bran Muffins

2 tb Shortening
3 tb Sugar
1 Egg
3/4 c Milk
1 c Bran
1 c Sifted enriched flour
2 ts Baking powder
1/2 ts Salt

Cream shortening and sugar; add egg and beat well. Stir in milk, then bran. Add flour sifted with baking powder and salt; stir until dry ingredients are just moistened.

Fill greased muffin pans 2/3 full and bake in hot oven (425) 20 to 25 minutes. Any type of bran may be successfully used in this recipe. Makes 1 dozen muffins.
