Cranberry Orange Muffins

2 3/4 c Whole wheat flour
1/4 c Oat bran
1/2 c Honey
2 ts Baking powder
1/2 ts Salt
1 ts Baking soda
1/4 c Orange juice
2 ts Canola oil
2 Egg whites
2 c Cranberry sauce; canned or homemade
1/2 c Orange juice; if needed


Preheat oven to 400 degrees. Grease muffin tins. Combine all ingredients except 1/2 cup of orange juice in a large bowl. Mix until blended. Add extra orange juice as needed to obtain a proper batter. Fill muffin tins 2/3 full. Bake 15-20 mins. Makes 30 medium or 18 large muffins.
