Corn Muffins

1 c Flour
2 c Corn meal
1 c Sugar
1 tb Baking powder
1 c Shortening
1 Egg
1 1/4 c Milk
1 ts Vanilla
1 ds Salt


Combine first 4 dry ingredients. Cut in shortening. In another bowl, combine egg, milk and vanilla. Add to corn meal mixture. Stir in salt. Fill greased muffin cups 2/3 full. Bake at 350 degrees for 20 to 25 minutes or until golden. Yield: approximately 12 muffins.
