Heart Healthy Cornbread Muffins

1 c Yellow corn meal
1/2 c All-purpose flour
2 ts Baking powder
1 tb Sugar
1/2 ts Salt
1/2 c Egg substitue, beaten
1 c Low-fat buttermilk
1 ts Vegetable oil

Mix and sift dry ingredients. Add milk, egg substitue, and oil. Pour into muffin tins that have been sprayed with nonstick spray. Bake 20-30 minutes at 350 until golden brown on top.
