Cheddar Bacon Muffins

10 sl Bacon; chopped
1 3/4 All-purpose flour
2 tb Sugar
1 tb Baking powder
1 ts Salt
1 1/2 c Shredded cheddar cheese
1 Egg; beaten
1 c Milk
3 tb Butter; melted

Cook bacon until crisp. Drain well reserving 2 Tbsp drippings. In large bowl combine flour, sugar, baking powder and salt; stir in cheese and bacon. In small bowl combine egg, milk, butter and reserved bacon drippings. Add to dry ingredients; stir just until moistened. Divide batter among 10 medium greased muffin cups. Bake in 400F oven for 20-25 minutes.
