Cottage Cheese Muffins

1 1/2 c Flour
1/2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1/4 c Margarine; softened
3/4 c Packed brown sugar
1 lg Egg
1 c Cottage cheese; lowfat
1/4 c Skim milk

In med. bowl, combine flour through salt.

In large bowl, cream together margarine and sugar. Beat in egg. Add cottage cheese and milk until smoth. Add dry ingredients and stir just until moistened.

Fill sprayed muffin tins 3/4 full, and bake at 375F for 20 mins.
