Blueberry Muffins

1 c Fresh or frozen blueberries
Sugar to taste
2 c Sifted flour
1 tb Baking powder
1 ts Salt
2 tb Sugar
1 lg Egg
1 c Milk
6 tb Melted butter
Extra sugar for top


Heat oven to 425 degrees. Grease muffin tins well.

Wash and drain Blueberries. Sweeten to taste. Let sit while making batter.

Sift all the dry ingredients.

Beat egg until frothy, add milk and melted butter, mix well.

Make small well in flour mixture. Pour in milk mixture and sugared blueberries. Stir quickly and lightly (about 2 turns of the spoon) until JUST mixed.

Fill muffin tins 2/3 full, sprinkle with sugar. Bake about 25 minutes.
