Cranberry Banana Muffins 2 Egg whites; whipped
3 tb Applesauce; at room temperature
3 tb Honey
3 tb Molasses
3 tb Orange juice; at room temperature
1 ts Vanilla
1 c Banana (2); mashed
1 c Flour; sifted
1 tb Orange peel; grated
1/2 ts Baking powder
1/2 ts Baking soda
1 c Cranberries; chopped
Prepare
muffin pans with cooking spray and flour. In
a mixing bowl, combine egg whites, applesauce, honey, molasses, orange
juice, vanilla, and banana. In another mixing bowl, combine the
flour, baking powder, baking soda and cranberries. Use an ice cream
scoop to fill medium muffin pans and bake for 20 to 25 minutes for
