Kiwi Muffins

1/2 lb Flour
1 Baking powder
1/2 ts Salt
5 1/4 oz Sugar .PP
1 Egg, beaten
2 5/8 oz Butter, melted
1/2 c Milk .PP
1 Grated lemon rind
1 1/2 c Kiwis, peeled and chopped
4 1/4 oz Walnuts, chopped


Preheat oven to 200 degrees C .

Sift together the first 4 ingredients. Stir in the egg, butter, and milk, just until moistened.

Fold in the lemon rind, kiwis, and nuts. Fill paper-lined muffin tins full, and bake approximately 20 minutes.
