Massachusetts Corn Muffins

1/2 c Honey
3 x Egg whites
1/4 c Vegetable oil
2 tb Baking powder
1 c Yellow cornmeal
2 x Whole eggs
1 3/4 c Skim milk
1/3 c Sugar
3 1/2 c All-purpose flour
1/4 ts Salt

In a large bowl, whisk together the honey, eggs, egg whites, milk, and oil.

Add the dry ingredients and mix with an electric mixer at med-high speed for 2 minutes.

Spray 2 muffin tins with non stick cooking spray or line with baking cups. Fill each cup 3/4 full. Bake in preheated 400 F oven for about 15 minutes, or till tops are golden brown.

Makes 24 muffins.
