Carrot Pineapple Muffins

1 c Whole wheat flour
1/2 c Regular flour
1/2 c Brown sugar
1 ts Baking powder
1 ts Baking soda
1/2 ts Nutmeg
1 ts Cinnamon
1/4 ts Salt
2 tb Oil; or Applesauce for LoFat
1 Egg; or 2 eggwhites
1/4 c Skim milk
1 c Carrot; Grated
8 oz Crushed pineapple; w/juic


Preheat oven to 350 degrees.

Mix flours, sugar, baking powder, baking soda, and seasonings in a bowl.

In a separate bowl mix together oil, egg, milk, carrots and pineapple with juice. Pour egg mixture into flour mixture and mix together.

Bake at 350 degrees for 20-25 minutes
