Cranberry Muffins

1 c Unprocessed bran
1 c Whole wheat flour
1/4 c Dark brown sugar
1 ts Baking soda
1/2 ts Salt
1 c Fresh cranberries
1/4 c Chopped almonds
2 ts Lemon zest
1 c Milk
1/4 c Vegetable oil
2 tb Molasses
1 Egg

Preheat oven to 375.

Butter a 9-muffin pan. Combine bran, flour, sugar, soda, salt, cranberries, almonds & zest in mixing bowl. Stir to blend. Combine in another bowl milk, oil, molasses & egg. Stir milk mixture into dry mixture just until combined ~ do not overmix. Fill muffin cups about 2/3 full. Bake 15-20 minutes until risen & lightly browned.

Approximately 10-20 minutes.
