Strawberry Muffins

1 1/2 c Strawberries, coarsely chpd
3/4 c Sugar, divided
1 3/4 c Flour
1/2 ts Baking soda
1/4 ts Nutmeg
1/4 ts Salt
2 x Eggs, beaten
1/4 c Butter, melted
1 ts Vanilla

In small bowl, combine strawberries and 1/2c sugar. Set aside for 1 hr. Drain and reserve liquid and strawberries separately. Preheat oven 425. Combine flour, baking soda, nutmeg, and salt, set aside. In med bowl, mix eggs, butter, vanilla,remaining 1/4 c sugar, and liquid from strawberries. Add flour mixture, stir until just combined. fold in reserved strawberries. Spoon into muffins cups. Bake 20 mins.
