Store and Bake Muffins 1 c Quick-cooking oats
1 c All-bran(c) cereal
1 c Buttermilk
1/2 c Brown sugar
1/4 c Vegetable oil
1/2 c Applesauce
2 Eggs
1 c Flour
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
Combine oats, bran cereal and buttermilk. Let stand 5 minutes to
soften cereal. Stir in brown sugar, oil and applesauce. Add eggs, one
at a time, beating well after each. Add flour, baking powder, soda
and salt. Mix until just blended. Microwave 1 Muffin - 30 to 45
seconds; 2 Muffins - 45 to 60 seconds; 3 Muffins - 60 to 75 seconds;
6 Muffins - 2 to 2 1/2 minutes. Makes 24 muffins. If desired, add 1
cup raisins or chopped dates or 1/2 cup raisins and 1/2 cup chopped
nuts to batter.
