2 c Whole-wheat flour
2 ts Baking powder
1 ts Ground cinnamon
1/4 ts Salt
2 lg Eggs
1/4 c Packed dark brown sugar
1 1/2 c Unsweetened applesauce
1/4 c Vegetable oil
1/2 c Chopped dates
Heat oven to 375F. Grease muffin cups or use foil baking cups.
Thoroughly mix flour, baking powder, cinnamon, and salt in a large
bowl. Break eggs into another bowl. Add brown sugar and beat until
smooth. Add applesauce and oil. Whisk until well blended. Stir in
dates. Pour over dry ingredients and fold in just until dry
ingredients are moistened.
Scoop batter into muffin cups. Bake 20 to 25 minutes or until brown
and springy to the touch in the center. Turn out on a rack to cool.
Place in a plastic bag and store until the next day.
Serve at room temperature.
