Bran Muffins

1 c All-purpose flour
1 ts Baking powder
1 ts Baking soda
1/2 ts Salt
3/4 c Raisins
1 c Buttermilk or sour milk
1 c Natural bran
1/3 c Cooking oil
3 tb Molasses or honey
1 Egg
1/4 c Packed brown sugar
1/2 ts Vanilla


In large bowl put flour, baking powder, soda, salt and raisins. Stir together well. Push up around sides of bowl making well in centre. In another bowl stir buttermilk with bran. Let stand 5 minutes. Add remaining ingredients to bran mixture in order given. Beat with spoon until mixed. Pour into well in first bowl. Stir just to moisten. Batter will be lumpy. Fill greased muffin tins 3/4 full. Bake in 375 degree F (190 degree C) oven for 20- 25 minutes. Let stand 5 minutes. Remove from pan.
