Chocolate Bourbon Muffins

3/4 c Flour
1/4 ts Salt
1/2 c Sugar
1 tb Bourbon
1/2 c Semisweet chocolate chips
1/2 ts Baking soda
1/2 c Softened butter
1 Egg
1 ts Vanilla
1/2 c Chopped pecans

Preheat oven to 400 degrees. Grease muffin cups. In a medium bowl; Mix together flour; baking soda and salt. Cream together butter and sugar until light and fluffy. Beat in chocolate; egg; bourbon and vanilla. Add the dry ingredients and beat just long enough to combine. Stir in chocolate chips and pecans. Spoon batter into prepared muffin cups.

Bake 15 to 20 minutes or until a toothpick inserted into muffin comes out clean. Cool for 5 minutes before removing from pan. Let finish cooling and then serve either warm or at room temp. Makes about 9 muffins.
