Corn Bacon Muffins 6 sl Bacon
1 c Flour (all-purpose)
1 c Cornmeal
3 tb Sugar
1 tb Baking powder
1/2 ts Salt
1 c Milk
1 Egg
1/2 c Corn kernals
Fry bacon until crisp. drain and cool on paper towels. Reserve 1/4 cup
drippings. Crumble bacon and set aside. In medium bowl, stir and toss
flour, cornmeal, sugar, baking powder and salt. Set aside. In small
bowl whisk milk, egg, corn kernals and bacon drippings until blended.
Add to dry ingredients, along with the crumbled bacon and stir till
just till blended. Spoon into buttered cornstick pans, filling each
mold 2/3 full. Bake in preheated 400 degree oven aobut 15 minutes
until toothpick inserted in center comes out clean. Cool in pans for
3 minutes, then invert to remove. Makes 7 cornsticks.
