Banana and Oat Bran Muffins 1 c Flour
1 c Oat bran
1 t Baking powder
1 t Baking soda
1/2 t Cinnamon
1/4 t Ground ginger
1/8 t Salt
1 Egg white
1 c Buttermilk
1/4 c Brown sugar
1 Banana; large and mashed
2 T Canola oil
1 T Honey
1/2 t Orange zest; grated
Preheat the oven to 400. Coat 12 muffin cups with Pam. In a medium
bowl, combine the flour, oat bran, baking powder, baking soda,
cinnamon, ginger and salt. Mix well. Add the egg white, buttermilk,
sugar, banana, oil, honey and orange zest. Stir just until the dry
ingredients are moistened; do not overmix. Divide the batter evenly
among the muffin cups. Bake on the center oven rack for 14 to 17
minutes, or until the tops are light brown. Loosen the muffins and
