Marriott Orange Muffins

2 1/2 c Flour
2 ts Baking powder
1 ts Salt
1/2 c Orange juice
1/4 c Vegetable oil
1 c Soft butter
1 c Sugar
4 Egg yolks
1/4 c Orange marmalade
2 tb Grated orange peel
4 Egg whites


Preheat oven to 375 deg. Grease 24 2-1/2 in. muffin cups. Sift flour, baking powder and salt together.

Combine orange juice & vegetable oil. Beat butter & sugar in a mixer bowl, then beat in egg yolks until light & fluffy. Beat in marmalade & orange peel. Add juice alternately with the dry ingredients until just blended. In a clean mixer bowl, beat egg whites until stiff. Gently fold into the batter. Spoon into prepared muffin cups & bake 20 min. or until golden.

Cool on a wire rack. Makes 2 dozen.
