Microwave Bran Muffins 2 1/4 c Whole bran cereal
1/4 c Dark brown sugar; packed
1 c Buttermilk
1/3 c Dark molasses
1 1/4 c All-purpose flour
1 ts Baking powder
1 ts Baking soda
1/2 ts Salt
1/2 c Raisins (dark or golden)
1/2 c Vegetable oil
1 Egg; slightly beaten
Mix cereal,
brown sugar, buttermilk and molasses in a medium bowl. Let stand
until all liquid is absorbed. Combine flour, baking powder, baking
soda and salt in another bowl. Stir raisins, oil and egg into cereal
mixture. Add the flour mixture until evenly moist.
Spoon batter into 12-18 paper-lined muffin cups, 2-1/2x1-1/4",
filling each half full. Microwave 6 muffins at a time, rearranging
once or twice during cooking, until a wooden toothpick inserted in
center of muffin comes out clean, about 3-5 minutes. Repeat with
