Blueberry Muffins

1 egg
1/4 c. corn oil
1 1/2 c. all-purpose flour
2 tsp. baking powder
1 c. blueberries
1/2 c. milk
1/2 tsp. salt
1/3 c. sugar


Beat together egg, milk, oil; set aside. Sift flour, sugar, baking powder, and salt together. Make a well in center of dry ingredients. Add egg mixture, stirring just to moisten dry ingredients. Fold in blueberries. Spoon batter into greased muffin cups, filling 2/3 full. Bake at 400 degrees for 20-25 minutes. Yield: 1 dozen.
