Apple Muffins

2 c. all purpose flour
1/3 c. sugar
1/2 tsp. cinnamon
1 tbsp. double acting baking powder
1/2 tsp. salt
1 egg
1 c. milk
1/4 c. salad oil
1 apple, shredded


Preheat oven to 400 degrees. Grease twelve 2 1/2 inch muffin pan cups. In large bowl with fork, mix flour and next 4 ingredients. In small bowl with fork, beat egg slightly; stir in milk, oil and shredded apple. Add egg mixture all at once to flour mixture; with spoon, stir just until flour is moistened, (batter will be lumpy.) Spoon batter into muffin pan cups. Bake 20 to 25 minutes until golden and toothpick inserted in center comes out clean. Immediately remove muffins from pan. Makes 12 muffins.
