Apple Nut Cinnamon Muffins

1 3/4 c. raisin bran cereal
1 1/4 c. all-purpose flour
3/4 c. sugar
1 1/4 tsp. baking soda
3/4 c. buttermilk
1/4 c. peanut & vegetable oil
1 lg. egg
1/2 c. peeled, finely chopped apple
1/2 c. chopped roasted peanuts
2 tbsp. butter, melted
1 1/2 tbsp. sugar
1/2 tsp. cinnamon


Preheat oven to 400 degrees. Grease 12 (1/2 cup) muffin cups. Mix first 7 ingredients together until well blended. Let stand 15 minutes at room temperature. Mix remaining ingredients in small bowl. Spoon 1 pound batter into bottom of each prepared cup. Cover evenly with apple mixture. Spoon remaining batter over apple mixture. Bake about 23 minutes or until tester comes out clean. Cool on rack 3 minutes. Yield 12 muffins. Best if served hot.
