Apple Streusel Muffins

2 c. sifted flour
1/2 c. sugar
1 tsp. salt
3 tsp. baking powder
1/3 c. oleo
1 lg. tart apple, pared, cored and diced
2 tsp. grated lemon rind
1 egg
2/3 c. milk
1/4 c. chopped walnuts
2 tbsp. sugar


Sift dry ingredients; cut in oleo until crumbly; set aside half of this mixture. To remainder, add apple and 1 teaspoon grated lemon rind. Beat egg; stir in milk, then add to apple mixture; batter will be lumpy. Fill well-greased muffin tins 2/3 full. Combine remaining flour mixture and rest of ingredients; sprinkle over batter. Bake 15 to 20 minutes at 425 degrees.
