Apple-filled Bran Muffins

1/3 c. apple, chopped
1/4 c. walnuts, chopped
2 tbsp. brown sugar
1 tbsp. margarine, softened
1/2 tsp. ground cinnamon
1 1/4 c. flour
1/3 c. sugar
1 tsp. baking powder
1/4 tsp. salt
1 c. milk
1 egg, beaten
2 tbsp. oil
1 c. whole bran cereal


For filling, stir apple, nuts, brown sugar, margarine and cinnamon in small bowl. Set aside. In large mixing bowl, stir flour, sugar, baking powder and salt. In medium bowl, stir together cereal and milk. Let stand for 5 minutes. Add egg and oil, and stir. Add cereal mixture to dry ingredients; stir until moistened. Grease muffin cups or line with paper cups. Spoon half the batter into cups. Top each with a rounded teaspoon of apple filling and then remaining batter. Bake at 400 degrees about 20 minutes or until golden. Serve warm. Yield: 12 muffins.
