Apricot-apple Muffins

4 c. all purpose flour
3 tbsp. brown sugar
2 eggs, slightly beaten
1 c. melted butter
1 c. chopped apricots
2 tbsp. baking powder
Dash salt
2 c. half and half
2 apples, unpeeled, grated
1/2 c. bran cereal

Combine flour, sugar, baking powder and salt; mix well. In separate bowl, stir together eggs, half and half and cooled melted butter. Add apples, apricots and bran cereal to dry ingredients. Add egg mixture to dry ingredients. Stir only until moistened, do not over mix. Batter should be lumpy. Fill greased muffin tins about 3/4 full. Bake at 375 degrees for 15 to 20 minutes until lightly browned and done. Serve hot.
