Banana Carrot Muffins

3 med. carrots
2 med. bananas
1/4 c. margarine
1/2 c. brown sugar, packed
1 lg. egg
2 c. whole wheat flour
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. baking soda
1 tsp. vanilla
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Grease a 12 cup muffin tin with margarine or spray with PAM. Grate carrots and set aside. Mash bananas with fork and set aside. In mixing bowl, cream margarine and brown sugar until fluffy. Add egg and beat well. Stir in the bananas. In small bowl, mix together flour, baking powder, salt and soda. Add flour mixture to banana mixture. Do not overmix! Add carrots, vanilla and nuts and combine carefully. Bake 20 to 25 minutes.
