Banana Muffins

1 lg. egg
3/4 c. packed brown sugar
1 1/3 c. mashed ripe bananas
1/2 c. raisins or walnuts (opt.)
1/3 c. vegetable oil
1 tsp. vanilla extract
1 c. reg. flour
1 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt

Heat oven to 375 degrees. Grease muffin cups. Beat egg and sugar in medium bowl. Beat in banana, raisins, oil and vanilla. Mix all dry ingredients. Add banana mixture and mix until all is moist. Bake 20 to 25 minutes. Makes 12 regular sized muffins.
