Bran Muffins

1 1/2 c. whole wheat flour
3/4 c. wheat bran
1/2 tsp. salt (optional)
2 eggs, beaten lightly
2 tsp. baking powder
2 tbsp. honey
1 1/4 c. milk
1/4 c. safflower oil

Blend all liquids and pour all at once into well formed in all dry ingredients which have been sifted together in a large mixing bowl. Stir quickly just to moisten dry ingredients. Divide into 12 oiled muffin tins and bake for about 25 minutes at 350 degrees. Serve immediately. (NOTE: For spicier muffins, add 2 teaspoons grated orange peel and 1 teaspoon cinnamon to batter.)
