Bran Muffins

1 c. all-purpose flour
1/2 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/4 c. 100% Bran cereal
1 c. milk
1 egg
1/4 c. vegetable oil

Blend first 5 ingredients; set aside. Stir together bran and milk until bran is moistened. Let stand 5 minutes. Add egg and oil, beating until blended. Add flour mixture. Stir until just combined. Do not over mix. Fill greased muffin pan cups 2/3 full. Bake in preheated 400 degree oven about 20 minutes. Makes 12 to 14 muffins.
