Bran Muffins

1 c. bran
1 c. flour
1 c. oats
1 tsp. baking powder
1 tsp. baking soda
1 to 2 tsp. cinnamon
1 tsp. vanilla extract
1/4 c. packed brown sugar
1 beaten egg
1 c. plain yogurt
1/2 tsp. salt
1/2 c. milk
1/2 c. honey
1/2 c. oil
2/3 c. raisins


Preheat oven to 375 degrees. Grease muffin tins. Mix sugar, egg, vanilla, yogurt, milk, honey and oil together. Mix oats, bran, flour, baking soda, baking powder and salt together. Add raisins to dry ingredients. Stir 2 mixtures together until moist. Do not overmix. Pour into tins and bake 15-20 minutes. Done when toothpick comes out clean or when muffin springs back when touched with finger.
