Cheesy Muffins

2 c. sifted flour
1/4 c. granulated sugar
1 tbsp. baking powder
1/4 tsp. salt
3 slices low-cholesterol cheese product
1 c. skim milk
1/2 c. Better'n Eggs
1/4 c. polyunsaturated oil

Combine flour, sugar, baking powder and salt. Sift into mixing bowl, cut cheese product into pieces and stir into flour mixture. Combine milk, Better'n Eggs and beat with a rotary beater until well mixed. Make a well in the center of the dry ingredients. Pour liquid into well. Stir just until dry ingredients pour liquid into. Spray 2 1/2 inch muffin cups with vegetable spray and fill 2/3 full. Bake at 350 degrees for 25 minutes or until done. Toothpick inserted in center comes out clean. 12 muffins.
