Corn Meal Muffins

1 c. cornmeal
2 tbsp. brown sugar
3/4 tsp. baking soda
2 eggs, well beaten
1 1/2 c. sour milk
1 c. flour
1 tsp. salt
1 tsp. baking powder
1/4 c. melted bacon fat


Sift flour, measure and sift with baking soda, salt, and baking powder. Mix with cornmeal. Combine bacon fat, sugar and eggs. Add sour milk and combine with dry ingredients. Beat only until smooth. Fill well oiled muffin tins 2/3 full. Bake in 435 degree oven for 15 to 20 minutes. Makes 8 servings.
