Corn Muffins

1 c. corn meal
1 c. flour
1/4 c. sugar
4 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 egg
1/4 c. shortening


Combine corn meal, flour, sugar, baking powder and salt. Add milk, egg and shortening. Beat until fairly smooth, about 1 minute. Pour batter into greased or paper lined muffin cups. Bake in preheated oven 15 to 20 minutes at 425 degrees.
