Corn Muffins

1 c. yellow cornmeal
1 c. Gold Medal flour
2 tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
1 c. milk
1/4 c. shortening
1 egg


Heat oven to 425 degrees. Grease bottoms of 12 medium muffin cups. Blend all ingredients about 20 seconds. Beat 1 minute, fill muffin cups 2/3 full. Bake 15 minutes. Immediately remove from pan. 12 muffins.
