Cranberry Muffins

1 1/2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1 1/2 c. finely chopped cranberries
1 egg
1/3 c. skim milk
1/4 c. vegetable oil
1/2 c. honey
2 tsp. vanilla


Preheat oven to 400 degrees F. In large mixing bowl, sift dry ingredients. Make well in center. Add 2 tablespoons of flour mixture to chopped cranberries; stir to mix well. Set cranberries aside. In medium bowl combine egg, milk, oil, honey and vanilla. Mix well. Add all at once to dry ingredients. Stir just until blended. Fold in cranberries. Fill greased or paper lined muffin cups 2/3 full. Bake 15 minutes or until toothpick comes clean. Makes 12. Also may add cinnamon and/or grated orange rind or replace milk with orange juice.
