Cranberry Muffins

1 1/3 c. whole wheat flour
*1/3 c. wheat germ
1 tbsp. baking powder
*3/4 c. skim milk
1/3 c. honey
1/4 c. egg substitute
*2 tbsp. canola oil
*1 c. coarsely chopped cranberries

*Healing foods. In a large bowl, combine the flour, wheat germ and baking powder. In a medium bowl, combine the milk, honey, egg substitute and oil. Stir the liquid ingredients into the dry ingredients until just blended, but don't overmix. Fold in the cranberries. Coat 12 muffin cups with non-stick spray. Fill about three-quarters full with the batter. Bake at 375 degrees F. for 20-25 minutes. Makes 12.
