2 c Flour, all-purpose
1 tb Baking powder
1/2 ts Salt
1 c Fresh strawberries; sliced
1/3 c Sugar
1/2 c Milk or cream
1 Egg; slightly beaten
1/4 c Butter; melted
Preheat oven to 400 degrees. Either grease the muffin pans, or line them
with paper baking cups.
Combine the flour, baking powder, and salt in a large mixing bowl, and
stir them together with a fork. Mash 1/2 cup of the berries with the sugar
in a small bowl. Add the mashed berries, remaining sliced berries, the milk
or cream, egg, and melted butter to the dry ingredients and stir JUST
enough to combine the ingredients.
Spoon the batter into the muffin pans, filling the cups about 3/4 full.
Bake for 12 to 15 minutes, or until a toothpick inserted in center of a
muffin comes out clean. Serve warm, with butter and jam; a jam made from
strawberries would be nice.
NOTE: Raspberries or blackberries can be used in this recipe
