Grape Nut Muffins

1 1/4 c. Grape Nut cereal
3 tbsp. butter
3 tbsp. honey
1 c. milk
1 lg. egg
3/4 c. whole wheat flour
3/4 c. unbleached white flour
1 1/2 tsp. baking powder
1/4 tsp. salt
Dash of cinnamon

Saute the Grape Nuts in the butter over medium heat, stirring frequently. After about five minutes, remove from heat and add the honey and mix well. Beat together the milk and egg until uniform. Add the Grape Nuts. Sift together the dry ingredients. Make a well in their center and add the wet and stir briefly. Fill your greased muffin cups 2/3 full and bake 20-25 minutes at 400 degrees. Yields about 1 dozen 2 inch muffins.
