Gruyere Cheese Muffins

1 2/3 c All purpose flour,
1/3 c Rye flour
2 ts Bkg powder,
1 pn Salt
1/2 c Gruyere ; finely shredded
1 c Milk
1/2 Sweet butter; melted
1 Egg; beaten
2 ts Dijon mustard
1 ts Honey

Preheat oven to 400 degrees. Stir flour, bkg powder, salt & pepper together, add cheese & toss to coat the strands. Put milk, butter, egg, mustard & honey in another bowl and whisk very well. Add the milk to the flour & cheese & mix just to combine-DON'T OVERMIX! Put paper cupcake liners into 8 or 10 muffin tins and fill with mixture. For a smaller muffin, fill more tins. Bake 20 to 25 minutes or until a wooden pick, inserted in the center of a muffin comes out clean. These are wonderful for lunch w/smoked turkey or baked ham & honey/mustard dressing. Make good mini muffins too. For minis-bake about 15-20 min
